Far more important however, is that the cuisine of the region is basically simple, allowing for a great deal of interpretation and experimentation on the parts of cooks. People in the Mediterranean love nothing better than to argue about what dishes originated from what country like the pastry known as “Baklava” (from Turkey). Cyprus boasts that they invented vodka in the 6th century. People from every major city from Jerusalem to Cairo, and from Istanbul to Athens all swears that their ancestors first made the sweet known as “halva”.
