Greek Pizza

Pizza Dough:
3 cups flour (I use King Arthur)
1 pkg dry yeast
2 tsp granulated sugar
2 tsp kosher or sea salt
1 ½ cups water
Olive oil
Mix all dry ingredients together in a large bowl. Add in water. Stir to combine into a soft dough. Drizzle a small amount of oil around the dough ball and roll in bowl to coat. Cover with plastic wrap and let rise for about 1 ½ to 2 hrs.
For the Pizza:
About 1 cup of sautéed spinach with garlic (see my other post for recipe)
4 oz feta, crumbled
1 cup shredded mozzarella
¼ cup shredded Parmesan
1 crushed garlic clove
2 tsp oregano
¾ cup chopped fresh plum tomatoes
2 TB olive oil
Preheat oven to 450 F. On a pizza pan or cookie sheet, drizzle the olive oil and spread to the edges with your fingers. Place dough in center of pan and use your hands to evenly spread out to the sides of the pan (this should be easy as the dough should be very soft by this time). 
Spread the oregano and the crushed garlic over the top. Sprinkle over the mozzarella and feta. Top with the spinach. Sprinkle the Parmesan over the top.
Bake about 20 minutes or until browned and bubbly. Remove from oven and top with tomatoes.
